WE ALL HATE VEGETABLES. Here is why:
When we eat high calorie food, our brain produces pleasure chemicals. It is our body’s reward mechanism to motivate us to look for enough food and calories.
Vegetables are low in caloric density. When you eat low calorie food, your brain’s pleasure center is not triggered as much as high calorie food does. That is why when you eat low calorie food, you feel less satisfied. Furthermore vegetable are so low in caloric density, it dilutes the caloric density of the whole meal. When you eat vegetables in your meal, you slow down the absorption of glucose and make the whole meal feel less hearty. That’s why when people eat too much vegetables they always complain they got hungry easier. chef used this technique to add vegetable to a heavy meal to make it feel less heavy.
But that is exactly why you need to eat vegetable.
Lots of them.
By slowing down the absorption of glucose, it keeps you metabolically healthy. It makes the lean tissue hungry and ready to absorb.
Chances are you are not eating enough vegetables. Even most health conscious people underestimate the amount of vegetables they need to eat. My recommendation is at least 5 servings of vegetable a day. And two of them has to be leafy vegetable. That means at least 1 servings of vegetable in every meal.
